Butchery Werz in Heidelberg has existed for 75 years. For several decades, they manufacture without their products in the traditional manner, making use of flavor enhancers, colorants or gluten. The specialty of Werz is Schaufele. This is a kind of ham, cooked in their own juice. It is vacuum packed so it is kept outside the refrigerator and use it throughout the year with dishes such as asparagus and winter stews or for example in gift packages.
